Roast Pumpkin on Iceberg

Cooking Time: 45 mins Meals: Serves 4

Add a range of salads to the meal table.

  1. Preheat oven to 180ËšC.
  2. Place pumpkin slices in a baking dish and spray with vegetable oil on both sides.
  3. Cook for 45 minutes or until pumpkin is soft.
  4. Remove from oven.
  5. Serve on iceberg lettuce drizzled with spicy plum sauce.

  • 4 slices pumpkin or squash
  • ¼ iceberg lettuce, finely sliced
  • ¼ cup spicy plum sauce
