Evaporated milk flavoured with coconut essence can be used in place of coconut cream.
- Heat oil in a heavy based pan, add green curry paste and stir fry for 2-3 minutes.
- Add pumpkin, onion and water.
- Heat to boiling, reduce heat and simmer for 20-30 minutes or until pumpkin is cooked.
- Stir through coconut cream and heat to steaming hot.
- Garnish with Kaffir lime leaves.
- Serve on rice.
- Serve with naan bread.
