Pumpkin Thai Green Curry

Cooking Time: 30 mins Meals: Serves 4

Evaporated milk flavoured with coconut essence can be used in place of coconut cream.

  1. Heat oil in a heavy based pan, add green curry paste and stir fry for 2-3 minutes.
  2. Add pumpkin, onion and water.
  3. Heat to boiling, reduce heat and simmer for 20-30 minutes or until pumpkin is cooked.
  4. Stir through coconut cream and heat to steaming hot.
  5. Garnish with Kaffir lime leaves.
  6. Serve on rice.


Variation:

  1. Serve with naan bread.

  • 1 Tbsp vegetable oil
  • 2 Tbsp Thai green curry paste
  • 3 cups diced pumpkin
  • 2 red onions, cut into wedges
  • 2 cups water
  • ½ cup coconut cream
  • 4 Kaffir lime leaves
