Pumpkin Pasta

Pumpkin Pasta

Meals: Serves 4

This easy sauce made in the microwave makes any pasta into a delicious meal. Try different shaped pasta for a change.

  1. Peel and roughly chop pumpkin and onion.
  2. Place pumpkin, onion, water and bay leaves in a microwave bowl.
  3. Cover and cook on high power for 8-10 minutes or until pumpkin is tender.
  4. Remove bay leaves.
  5. Purée with pepper, nutmeg and sour cream.
  6. Finely chop salami.
  7. Place pumpkin seeds and margarine in a small microwave dish.
  8. Cover and cook on high power for 2-3 minutes.
  9. Cook pasta according to instructions on the packet. Drain.
  10. Place pasta into serving dish.
  11. Pour hot pumpkin sauce over the pasta, sprinkle with salami and pumpkin seeds and serve.


Variation:

  1. Sprinkle with grated or shredded Parmesan cheese.

Ingredients

  • 600g pumpkin
  • 1 large onion
  • ½ cup water
  • 3 bay leaves
  • freshly ground black pepper to taste
  • ¼ tsp ground nutmeg
  • ½ cup lite sour cream
  • 6 slices salami
  • ¼ cup pumpkin seeds
  • 1 tsp margarine
  • 300g dried, OR 500g fresh pasta
