Kumara & Pumpkin Bake

Cooking Time: 15 mins Meals: Serves 6

This is so easy to make and is delicious.

  1. Preheat oven to 180°C.
  2. Line a baking dish with aluminium foil, leaving enough to fold over the top.
  3. Combine all ingredients in a bowl and mix well. Place mixture into the baking dish and fold over aluminium foil to make a parcel.
  4. Place in preheated oven and bake for about 1 hour or until cooked.
  5. If desired, open foil for last 15 minutes to allow top to brown.


Variation:

  1. Use floury, fluffy potatoes instead of the kumara.

Ingredients

  • 1 kg kumara, peeled and grated
  • 1 kg pumpkin, peeled and grated
  • 6 silver beet leaves, thinly sliced and chopped
  • ½ cup peanuts, dry roasted and chopped
  • 1 cup lite coconut milk
  • black pepper to taste
