Stuffed Potatoes

Stuffed Potatoes

Meals: Serves 4

These delicious stuffed potatoes can be made before hand and reheated in the microwave or oven.

Fillings:

  1. ¼ cup diced red capsicum and ¼ cup cooked finely sliced onion
    OR
  2. ½ cup chilli beans and ¼ cup sliced spring onion
    OR
  3. ¼ cup diced ham and ½ cup crushed pineapple
    OR
  4. Cut each potato in half and scoop out the flesh into a bowl.
  5. Add milk and mash until smooth.
  6. Add cheese, chives and chosen filling. Mix well.
  7. Pile back into the potato skins.
  8. Serve with a salad


Variation:

  1. Bake or grill until golden and crunchy on top.
  2. Make small stuffed potatoes, refrigerate and put in lunch boxes.

Ingredients

  • 4 large baking potatoes, baked or microwaved till soft
  • ½ cup milk
  • 1 cup grated tasty cheese
  • 2-3 Tbsp chopped fresh chives
