Cooking Time: 20 mins Meals: Serves 4

This is great any time of the day but tastes especially good as a weekend or holiday treat.

  1. Cook potatoes in boiling water for 15 minutes or until tender, drain.
  2. Pour milk over the potatoes and mash until smooth.
  3. Grill, pan fry or microwave bacon until crispy then chop roughly.
  4. Stir into mashed potato with spring onion and season to taste.
  5. Serve with a poached egg on top.

Ingredients

  • 4 medium mashing or baking potatoes, peeled and cut into chunks
  • ½ cup milk
  • 3-4 rashers bacon
  • 2 spring onions, finely chopped
  • salt and freshly ground black pepper
  • 4 eggs, poached
