This is great any time of the day but tastes especially good as a weekend or holiday treat.
- Cook potatoes in boiling water for 15 minutes or until tender, drain.
- Pour milk over the potatoes and mash until smooth.
- Grill, pan fry or microwave bacon until crispy then chop roughly.
- Stir into mashed potato with spring onion and season to taste.
- Serve with a poached egg on top.
