Great with barbecued sausages.
- Slice onion into wedges.
- Heat oil and garlic in a large heavy based pan.
- Add mushrooms and stir fry until lightly brown.
- Add onions and continue cooking for 1-2 minutes, or until onions are heated through.
- Place spinach in a bowl or serving platter. Top with onions and mushrooms and serve.
