Gingered Greens

Cooking Time: 10 mins Meals: Serves 4

Succulent vegetables lightly coated in a ginger and honey sauce taste amazing.

  1. Stir fry vegetables and ginger in oil for 8-10 minutes or until tender but still slightly crisp.
  2. Add honey and vinegar and toss well to ensure vegetables are well coated and the honey has melted.
  3. Serve immediately.

Ingredients

  • 6 cups prepared vegetables e.g. cauliflower and broccoli florets, wedges of capsicum
  • 1 Tbsp finely chopped fresh ginger
  • 2 Tbsp vegetable oil
  • 2 Tbsp honey
  • 2 Tbsp white wine vinegar
