Quinoa with Roast Carrots & Onions

Cooking Time: 15 mins Meals: Serves 4

Quinoa is one of the world's oldest grains and originally came from South America.

  1. Bring a large pot of salted water to the boil, add quinoa and bring back to the boil.
  2. Reduce heat and simmer for 12-15 minutes. Drain.
  3. Place in a mixing bowl, add carrots and onions and toss gently.
  4. Place in a serving bowl, and garnish with herbs.
  5. Serve warm or cold.

There are several different types of quinoa so try this recipe using the other colours.

Ingredients

  • 2 cups red quinoa
  • 4 carrots, sliced and roasted
  • 4 onions, peeled, quartered and roasted
  • chopped fresh herbs for garnish, optional
