Citrus Glazed Carrots

Meals: Serves 4

This glaze is fantastic on all sorts of vegetables such as parsnips, carrots, swedes, kumara, turnips, pumpkin or yams.

  1. Steam or boil carrots until just tender.
  2. Heat oil in saucepan over a low heat.
  3. Add honey or brown sugar and stir until dissolved.
  4. Add citrus rind and season to taste.
  5. Pour over the carrots.
  6. Serve garnished with herbs.


  • 3 medium carrots, peeled and cut into sticks
  • 1 Tbsp vegetable oil
  • 1 Tbsp honey or brown sugar
  • 1 tsp finely grated citrus rind (orange, lemon or lime)
  • freshly ground black pepper to taste
  • 1 Tbsp freshly chopped herbs e.g. parsley or coriander
